Ingredients:

3 eggs
2 tbs coconut milk
salt and pepper
garlic minced
2 tbs coconut oil
4 strips of bacon
1 cup organic, gluten free pizza sauce
1 tomato, sliced
1/2 green pepper, chopped
1/4 red onion, chopped
1/4 yellow onion, chopped

Directions:

In a large skillet, heat coconut oil and cook strips of bacon. Set aside.

In medium skillet, heat coconut oil and minced garlic, 2-3 minutes.

In small mixing bowl, scramble eggs, coconut milk, salt and pepper.

Once garlic has been heated, pour scrambled egg mixture on. Lower heat to medium. Cover and let eggs firm for 3 minutes. Do not touch eggs.

Chop onion and pepper, slice tomatoes.

After 3 minutes are up, place pan of eggs in broiler for 3 more minutes.

Remove from oven, layer egg crust with sauce. Break up pieces of bacon, layer on top of sauce. Top with tomato slices, peppers and onion. Place pan back into broiler for 5 more minutes.

Slice and serve.
