I know it seems like I plan these things, but I really don’t.
It truly is just a coincidence that on days I announce giveaway winners, I also share a new recipe.
But it works, because I feel bad for the people who haven’t won the giveaway, which today is a Slimkicker Sponsored Iron Gym.
And since there can only be one winner, the chances that you have won, are well, slim.
To be fair, I always tell the giveaway winner that they are in no way ever allowed to look at, create, or eat the following recipe.
So you might be sitting there right now, hoping you’re not the winner, because you want to be able to look at, create, and then eat the following recipe.
You might want to remove your name from the drawing.
But it’s too late.
The winner has been selected.
The contest has closed.
You should have thought of that before……

For the rest of you:
Almond Butter Chocolate Chip Cupcakes
makes 6 small cupcakes
3 eggs
1/4 cup of coconut flour
1/4 cup coconut oil, melted
1/8 cup maple syrup
1/2 tbs vanilla extract
1 tsp sea salt
1/8 tsp baking soda
1/8 cup of almond butter, smooth
1/2 cup of Enjoy life chocolate chips.
Directions
Preheat oven to 350 degrees F.
Combine coconut flour, sea salt and baking soda in a large bowl.
In your mixer, combine eggs, oil, maple syrup, almond butter and vanilla. Mix on low to combine.
Pour dry ingredients into wet ingredients in mixer.
Mix on medium speed until a smooth and creamy batter forms.
Remove bowl from mixer and stir in chocolate chips manually.
I placed 6 paper holders in a muffin tin, and filled each about 1/3 of the way up.
Bake for 15-18 minutes, until toothpick comes out clean.
Remove and cool completely.
Frost with Almond Butter Chocolate Chip Frosting.

Almond Butter Chocolate Chip Frosting
1/2 cup of Enjoy Life chocolate chips
1/4 cup of almond butter
Directions
In a mixer, mix almond butter until it is completely smooth.
Heat a pot of water over medium heat, place a heat-safe bowl filled with chocolate chips on top to form a double broiler.
Stir until chocolate has melted and pour it directly onto almond butter.
Mix on low until combined.
Frost cooled cupcakes, sprinkle a few extra chocolate chips on top!

So…I have this thing where I love different diets, because I think they all make so much sense. But if I tried them all, I’d only be able to eat raw kale and soaked almonds. Anyway, the point is, paleo is one of those diets, and you’ve inspired me to try getting the grains out of my dessert items…that’s where they always sneak in. These look really nommy.
