Paleo Mediterranean Sea Scallops
Ingredients:
1 lb sea scallops
1 cup Chopped Onions
3 tsp Chopped Garlic
6 kalamata olives
1 tbs olive juice
2 tbsp Organic Extra Virgin Olive Oil
1 cup Organic Chopped Tomatoes
1/4 cup Parsley
2 tbsp Lemon Juice Raw
2 large Hard-Boiled Eggs
2 tbsp sunflower seeds
1 tsp ground oregano
Directions:
In a large saucepan, heat scallops in 1 tbsp oil until opaque, about 5 min
Transfer the scallops and liquid to a bowl and set aside
Rinse and dry pan
Heat 1 tbsp of oil in the pan, this time add onions and saute 2 min
**Side note: at this point add eggs to a separate pot, bring water to boil, cover and let sit in hot water for 15 minutes**
Add garlic and saute 1 more min
Add tomato, chopped parsley, olives, olive juice, lemon juice, oregano, and pepper
Boil, then reduce heat and simmer 5 min
Stir in the scallops and liquid and bring to a boil
**Remove eggs from hot water, rinse in cold water, peel and chop**
Serve into bowls, top with the chopped hard-boiled egg and pine nuts
